VIEWLearn how to make a chai spiced tea with our recipe
Add 2.5cm of sliced unpeeled ginger, 6 green cardamom pods, 2 cinnamon sticks and 8 cloves into a saucepan. Bruise the spices using the end of a rolling pin in order to release their flavours.
Add 1.5 litres of cold water to the saucepan and bring it to the boil
Once boiling, turn the heat down to low before allowing it to gently simmer for 10 minutes.
Turn the heat off. Add 6 Darjeeling tea bags to the saucepan and steep for 5 minutes.
Remove the teabags from the saucepan before adding 250ml milk and 100g golden caster sugar.
Turn the heat back on and bring it to a gentle simmer whilst continuing to whisk in order to dissolve the sugar.
Strain into cups and serve whilst hot.
