A 21st Century process of removing caffeine from green coffee beans, this process uses pure Swiss spring water to wash and swell the gourmet coffee beans which releases and washes away the caffeine yet leaves the flavour intact. This Costa Rica / Guatemala decaf coffee blend gives a gentle flavour with low acidity and a crisp and subtle finish.
The Swiss Water Process
Caffeine occurs naturally in several plants including coffee and cocoa acting as a natural pesticide and the fact that Robusta gourmet coffee beans contain twice as much caffeine as Arabica coffee beans, is one of the reasons it is much hardier. In humans caffeine is a stimulant which raises our heartbeat. It is not particularly harmful to us as when we ingest it as our bodies release a chemical to combat the effects. In fact, tests have shown that caffeine can help combat the effects of both liver damage and Alzheimers. However, for those who enjoy their coffee but do not want the effects of caffeine, decaf coffee is the answer.
Although the Swiss Water Process was pioneered in Switzerland in the 1930s, today the world's only Swiss Water Process decaffeination facility is based, near Vancouver in Canada. Called The Swiss Water Decaffeinated Coffee Company it specialises in decaffeinating raw coffee beans by solely washing the beans in pure British Columbian water. This gently removes the caffeine until the beans are 99.9% caffeine-free, while maintaining the distinctive origin and flavour characteristics.
The actual Process is:-
- Green beans are soaked in hot water to release the caffeine and coffee solids into the water. The beans are then discarded.
- The water is then passed through a carbon filter which removes the caffeine.
- The resulting solution of coffee solids is called “green coffee extract”- GCE.
- GCE is then mixed with new green beans and because GCE is coffee solids without caffeine, it attracts only caffeine from the new beans.
- The decaffeinated beans are then dried ready for roasting.
